That is very similar to the old “line training” of the military. Everyone would stand in a line and hit air. You definitely can do that, but keep in mind that hitting something and experiencing resistance/impact and “awkward” strikes is also incredibly important. However, if you want to kata/shadow box/“line train” feel free. It’s just another way to get reps and something I do when I’m feeling froggy and don’t have something immediately to hit.
