Great stuff. In reality what would replace the pad? a defense /block with two hands ready to grab?
What you are seeing is the use of an equalizer here to deal with a knife threat. So think a heavy back pack, laptop computer, briefcase. Anything with very little give that can be used as an equalizer. In the SDTS we also teach the use of a chair (lion tamer chair)
